WOW was this good!! After reviewing a ton of recipes on Pinterest (Of Course), I came up with my own (since I didn’t have some of the ingredients in the house that most of the recipes called for) This was a last minute ‘I’ll make this while Levi is napping’ side dish for dinner!
You will need 2 sweet potatoes (most recipes called for 3 but all I had was 2).
Peel and cut 2 sweet potatoes.
Boil in salted water (it was about 15 minutes) until tender.
While potatoes are boiling grab 1/2 cup of Vanilla Almond Milk (or any milk you have in the house), 1 tsp of cinnamon, and 1 tsp of salt.
Once potatoes are cooked add the milk, cinnamon, and salt. Then mash (just like you would make mashed potatoes).
Place mashed sweet potato mixture in baking dish. For topping you will need:
1/2 c walnuts – choppped (most recipes called for pecans but again all I had was walnuts)
1/2 c flour
1/4 c cold unsalted butter chopped into small pieces
1/4 c brown sugar
1/2 tsp cinnamon
Mix all ingredients together and spread over top.
Bake at 375 for about 18-20 minutes.
Remove, add marshmallows and bake another 15 minutes. (Again, most recipes called for the mini marshmallows but all I had were the jumbo, so I just cut them into smaller pieces)
YUMMY!!!!

Which mean something to me…I am definitely a cook in training, so when I make a meal that Brian really likes (even though you will eat anything I make), I SMILE 🙂
